Mom had craving for salmon today, so..... Recipe serves 3 small eaters or 2 big ones.. (^_^)
Ingredients:
Tomato Salad
2 tomatoes - diced (scoop out the seeds if you don't like it sour)
1 tbsp mayonnaise
1 tbsp sweet chilli sauce
juice of 1 wedge of lemon
Potato
6 small potatoes, scrubbed (you can use baby potatoes too, just increase the quantity)
3 tbsp light sour cream
1 tbsp mayonnaise
spring onion - chopped (optional)
Salmon
Salmon fillet (quantity depends on eater; I used 1-inch thick slices)
salt and pepper (to taste)
juice of 1 wedge of lemon
Method:
Tomato
[1] Mix the mayo, chilli and lemon juice till smooth.
[2] Stir in the tomatoes and chill in the fridge till ready to serve.
Potatoes
[1] Boil the potatoes till cooked (about 7-8 minutes)
[2] Mix the mayo and sour cream till smooth.
[3] Cut the potatoes into quarters and spoon the cream mix over them. Sprinkle with spring onion if using.
Salmon
[1] Clean and pat dry the salmon fillets.
[2] Sprinkle with salt and pepper, and drizzle some lemon juice over.
[3] Sear in a medium-heat pan (about a minute on each side).
To serve, assemble as in the picture.
Mom liked it enough to polish off everything. Kids enjoyed helping me mix the tomato salad too. Kinda healthy too since the only oil I used was for the salmon. Have fun! (^_^)
